    I’d expect this to hit the mark on “not too tricky” and miss the mark on “presentation”. This also couples as my wife’s assessment of me.

    2 cups cider vinegar
    1 cup olive oil
    2 egg whites (with egg yolks for the Simply Unmotivated!)
    1 tablespoon poultry seasoning
    2 tablespoons salt (more for the unmotivated that like egg whites!)
    Pepper to taste

    mix ingredients an marinate with your favorite chicken parts overnight for best results. You can roast this but most would not roast – this is best on charcoal or a wood-fired grill. Skin the chicken if that gets me points here for a win, it will taste great either way.

    i love the wasa whole grain(46 calories/serving)!!! tastes great with a wedge of laughing cow light swiss cheese(35 calories) or with naturally more, which is a yummy peanut butter “base fortified with flax seed, flax oil and contains omega-3 and omega-6 essential fatty acids.” a serving of naturally more is 2 tbsp and does have 169 calories, but also has 10g protein and 4g dietary fiber . . . i love peanut butter and this is a great less guilt option for when i absolutely have to have peanut butter. their website is naturallymore.com !!!

    I have a salad dressing recipe to share. 1 part EVOO or just OO to two parts vinegar, flavored or not. Add the following in no particular amount, just to taste. Salt, pepper, garlic powder, italian seasoning OR tarragon seasoning OR both and the secret is…a little Equal sweetener. Then toss everything well.
    For myself a good size salad would be 1 T OO to 2 T tarragon vinegar, a HUGE heaping t of italian seasoning mixed with some tarragon, a good shake or two of the garlic powder, a couple of dashes of S and P and the equal. MMMMMMMMMMMMM It’s better than an ice cream sundae (almost)

  • Sounds great! For those of us who are trying to avoid sweeteners you could substitute a bit of orange juice, but then don’t forget to use it within a week or so. Thanks Miriam!
