  • I recently lost over 60lbs and went from size 42 waist to a 34. Exercise was a huge factor, but I would have to say what we eat and when is a more crucial factor. I try to eat 5-6 smaller protein-rich meals with plenty of fresh fruits and vegetables. Also, I eat my biggest meal of the day in the morning and taper off with subsequent ones throughout the day. This helps get the metabolism going and keeps the appetite under control. Obese people often eat less than I do, except they skip breakfast, chug sugary sodas all day, snack on greasy carb-laden junk food and then gorge before dinner and up until bedtime. By doing that, you are essentially telling your body to store fats and metabolize foods at a slower rate.

    i love the wasa whole grain(46 calories/serving)!!! tastes great with a wedge of laughing cow light swiss cheese(35 calories) or with naturally more, which is a yummy peanut butter “base fortified with flax seed, flax oil and contains omega-3 and omega-6 essential fatty acids.” a serving of naturally more is 2 tbsp and does have 169 calories, but also has 10g protein and 4g dietary fiber . . . i love peanut butter and this is a great less guilt option for when i absolutely have to have peanut butter. their website is naturallymore.com !!!

    Great tip with the frozen grapes! Any recommendations of 5 or 6 other snacks – 100+/- calories, with some balance of protein, carb, fats? One that seems to work for me is a multi-grain cracker with light ricotta cheese and a small amount of honey. I also enjoy a hard-boiled egg, or 1/2 cup of plain yogurt with honey and a couple of teaspoon of multi-grain cereal. Always looking for new ideas here -

  • I also like to make a sandwich using Wasa crispbread, two slices of ham, a small bit of lowfat cheese, and some sharp honey mustard. I eat it in the true Swedish tradition without a top. I get the “fiber plus” variety of crispbread so one slice is only 30 calories. I calculate the ham and the cheese at about 30 calories apiece for a total of about 100 calories give or take. The high fiber content in the crispbread helps it stick with me, and gives me the crunch that I love. The best part is that only takes a few minutes to put one together.

    There are lots of interesting things you can do with the crispbreads, particularly if you get the hang of not needing a lid on it; it’s actually not avery convenient way of eating them anyway. A friend of mine likes to eat them with a bit of lowfat cream cheese with raisins on it, the raisins stick nicely to the cheese instead of rolling around all over the place.

    Since you like ricotta you might try the ricotta on the crispbread with fruit too, apple slices?…ooo you could add ham to that too! Maybe we should start a snack contest? Ok who has an idea or a recipe they want to share?

  • I picked up a box of frozen mango and it works! They have a nice texture, its like little mango popsicle cubes. I also worked out that if I put the strawberries in the micro for 30 seconds it makes them just about right, still a little frozen but not mushy. I also got some frozen raspberries and they have an ok texture, they are pretty tart but they are growing on me actually. The best part is in general the frozen fruit is of good quality, costs much less than fresh, and because they are frozen they can’t go bad…it’s all good.

This post is in response to a question from Louise who asked “Why does eating more help?”  My answer is that it is not necessarily more that helps but more often, and with a few caveats…never too much and never too little.

The impossible I do immediately

The impossible I do immediately, miracles take a little longer.

I define impossible as the ability to keep a food log or journal of what I eat every day.  The effort lasts for about 1.25 nanoseconds and then vanishes into the Bermuda Triangle of Good Intentions.  Oh well.

    I still do not understand how eating more helps? Eating more often through out the day never seemed to work for me.

    I have a salad dressing recipe to share. 1 part EVOO or just OO to two parts vinegar, flavored or not. Add the following in no particular amount, just to taste. Salt, pepper, garlic powder, italian seasoning OR tarragon seasoning OR both and the secret is…a little Equal sweetener. Then toss everything well.
    For myself a good size salad would be 1 T OO to 2 T tarragon vinegar, a HUGE heaping t of italian seasoning mixed with some tarragon, a good shake or two of the garlic powder, a couple of dashes of S and P and the equal. MMMMMMMMMMMMM It’s better than an ice cream sundae (almost)

  • Sounds great! For those of us who are trying to avoid sweeteners you could substitute a bit of orange juice, but then don’t forget to use it within a week or so. Thanks Miriam!
